This coffee comes from the Kindeng Dry Mill in the Jikawa province of Papua New Guinea.
It’s a blend of coffee sourced from about 1,500 smallholders in the Kindeng and Arufa municipalities, where the average farm size is 1-2 hectares. The soil is mainly sandy loam and loamy clay. After cherries are delivered to the mill, they are processed and dried on raised beds and canvases. During the typical 1-month drying period, the cherries are moved several times a day to ensure uniform moisture content. Once dried, the coffee is hulled, milled, and prepped for export.
