From October to January, coffee in small-holder farmers’ gardens is harvested in the Mesina region. Cherries are hand sorted and selected between 18-22° Brix. They are then dried on raised beds in full sun and turned regularly for 18-30 days to reach 10-12% moisture. On hot days, cherries are covered with plastic to control drying. Once dried, cherries are stored in their pods to enhance flavour. The local partners perform rigorous quality control during milling, including triple-passing through colour sorters and hand-sorting tables, to improve overall high-quality beans.
